dc.description.abstract[SPA]En los últimos años ha aumentado mucho el consumo de productos vegetales mínimamente procesados en fresco (MPF) debido al actual estilo de vida, por lo que el estudio de su comportamiento en la supervivencia comercial resulta de gran interés. En la necesaria desinfección de los productos vegetales para el consumo humano, se ha demostrado que el NaOCl, aunque sea muy eficaz y barato, supone un riesgo para la salud humana así como para el medio ambiente. Por ello se están investigando alternativas seguras para la salud y ambientalmente sostenibles. A este respecto, el agua electrolizada neutra (NEW) se está mostrando como uno de los desinfectantes que más interés despierta para la industria de vegetales MPF por su eficacia e inocuidad. Se está conociendo bastante acerca del efecto del NEW sobre los microorganismos, pero apenas existe información sobre cómo influye en los sistemas enzimáticos de los productos MPF tratados. En este trabajo se estudia el efecto del NEW con 100 ppm de Cl-, comparado con el de un testigo de NaOCl, en dos tipos varietales de brócoli MPF, uno convencional (Brassica oleracea, grupo Italica) var. Parthenon y otro recientemente introducido en el mercado, el híbrido (Brassica oleracea, grupo Alboglabra) llamado Bimi, Kai-lan o Tenderstem, sobre el sistema antioxidante y la actividad mirosinasa. Con ello se ha pretendido conocer también la influencia de la matriz vegetal. Se estudiaron las actividades enzimáticas ascorbato peroxidasa (APX), catalasa (CAT), guayacol peroxidasa (GPX), superóxido dismutasa (SOD) y mirosinasa (Myr), a lo largo de la vida comercial de ambos cvs. de brócoli MPF. Los resultados han demostrado que, aunque existe una tendencia a que la actividad antioxidante se vea algo aumentada en ambos cvs. de brócoli tratados con NEW, no hay diferencias significativas respecto del NaOCl. Ello, unido a su eficacia como desinfectante permiten considerar al NEW como una posible alternativa al NaOCl.[ENG]In recent years consumption of minimally fresh processed (MFP) vegetables has greatly increased due to current lifestyle. For that reason, the study of their behavior in the commercial survival is of great interest. In the need of disinfection of plant products for human consumption, although NaOCl has shown to be very effective and inexpensive, it supposes a risk to human health and to the environment. Thus, safe alternatives for health and environmentally sustainable, are being researched. In this regard, neutral electrolyzed water (NEW) is proving to be one of the disinfectants that arouse most interest for MFP vegetable industry due to its efficacy and safety. The effect of electrolyzed on microorganism is well known, but there is little information on how it affects the enzyme systems of MFP products. This paper studies the effect of NEW 100 ppm Cl-, compared to a witness of NaOCl on two varieties of broccoli MFP, conventional (Brassica oleracea, Italica group) var. Parthenon and the recently introduced in the market, the hybrid (Brassica oleracea, Alboglabra group) called Bimi, Kai-lan or Tenderstem on the antioxidant system and myrosinase activity. As well, influence of vegetable matrix, has been tried to be sought. Enzyme activities were studied, ascorbate peroxidase (APX), catalase (CAT), guaiacol peroxidase (GPX), superoxide dismutase (SOD) and myrosinase (MYR), along commercial life of both cvs. MPF broccolis. The results have shown that, although there is a tendency for the antioxidant activity to increase in both cvs. NEW treated broccoli, no significant differences were observed when compared with those treated with NaOCl. This, combined with its effectiveness as a disinfectant, NEW could be considered as a possible alternative to NaOCl.es_ES
